Zuya, also spelled suya, is the spiced grilled meat sold on streets from Ghana and Nigeria to Cameroon. Founder Leo grew up in Cameroon and left a corporate job to cook his grandfather’s recipes, starting at music festivals under the name Tasty Suya before settling at Grazeland, the food park on Booker Street, Spotswood.
Beef and chicken are marinated for 48 hours in the house spice rub, then cooked over a wood fire. Have them with salad, in a fresh French roll, or as a plate with coconut fried rice and sweet fried plantain.
