Since 2006, OneWay has baked from a single stone oven on Station Street in Lalor, with no second store and no franchise. Za’atar flatbread, hand-folded halloumi pies, meat pizzas and labne pizza come out in continuous batches through the day rather than all at dawn, and the dough is slow-fermented.
Meat and fillings are prepared by hand in the kitchen each morning. Vegan cheese, vegetarian recipes and gluten-free options mean mixed groups are covered, and catering is baked to your pickup time for weddings, birthdays and work events across Lalor, Epping, Reservoir and Thomastown.
