Bowltiful specialises in Lanzhou beef noodles from Gansu province and has served them in Melbourne since 2018, in the CBD and Box Hill. The clear broth is made from halal beef and bones, cooked overnight, with radish for natural sweetness and no soy sauce, then seasoned with salt and herbs.
A proper bowl follows the Lanzhou rule of “Yi Qing, Er Bai, San Hong, Si Lv, Wu Huang”: clear soup, white radish, red chilli oil, green herbs and yellow hand-pulled noodles. Spicy lamb noodles are on the menu too. The CBD shop is at 382-384 Elizabeth Street.
